The Classic French Dip with Au Jus

This is one of those restaurant sandwiches that can easily be made at home…and should be made at home.  There is nothing stopping you.  It’s a perfect quick weeknight dinner with a crisp garden salad or sweet potato fries.

All you need is a package of Au Jus gravy mix, some sandwich rolls, packaged sliced roast beef, a bit of butter, and some sliced provolone cheese.  And if you’re at my house, there’s the option of adding sautéed onions and peppers.

Just prepare the Au Jus according to package instructions.  This entails heating water and adding the mix.  I do this in a medium sized sauce pan.

Slice the sandwich rolls and smear with a bit of butter, lightly brown butter side down on a warm skillet.  Set aside.

Take your sliced roast beef and with tongs dip into the hot Au Jus, swirl around a little until the beef heats up…which will take a few seconds at most.  Lift out of the sauce, let the excess Au Jus drip off and place the beef slices onto the toasted roll.  Top with the slices of provolone cheese, place onto a foil lined baking sheet and place in the oven to lightly broil on low until the cheese becomes a tantalizing bubbly brown.  Pull out of the oven, slice in half and serve up with a small bowl of the Au Jus for dipping. That’s all there is to it!
