Ok. This is a knock-out copy cat recipe for Old Chicago Sicilian Rolls.
Years ago I remember these being an incredible bite during a late-night baseball dinner at this restaurant. Laura, a friend on mine ordered them for dinner and let me try them. Why, on earth I remember what people order in a restaurant I will never know, it’s freaky…but I do. Anyway, this last summer I was with my step-dad Henry and his son Roger in Colorado Springs. We were on a break from the hospital when my mom was recovering from surgery. We found ourselves at Old Chicago for dinner and I remembered the Sicilian Pizza Rolls. We spent time talking, closed the tab, then opened it again. I loved the company and the conversation. Roger, who is from the east coast, doesn’t have access to an Old Chicago Brewery. He was particularly in love with these rolls. I’m sending this to him & his gorgeous wife, Lisa, to make sometime soon. Kudos goes to the original recipe sleuth with food.com who figured out the components. I highly recommended these saucy, spicy, doughy, cheesy, pepperoni-y, oozy, gooey lovely rolls.
Tip - my first few batches fell apart on the baking sheet so I tried them in a cupcake pan. It works much better.
